This was a test to see if Grill Grates would be of any benefit over the cast iron grates of the FEPG. The video is a little deceiving at the end as the steaks rested on one plate for 20 minutes, so that plate appeared to have more juices than the other but in reality the moisture content of both was about the same.

Leg of Lamb - Chef Marshall O'Brien
Marshall cooks lamb on the grill. See recipe below: Leg of Lamb serves 6 3lb boneless leg of lamb 4-6 sprigs fresh rosemary, few inches in length 4 cloves garlic, whole or sliced in half lengthwise Olive oil Kosher or sea salt Ground or cracked black pepper 1. Clean lamb as needed, washing with water then patting dry with paper towel. 2. Place on plate or sheet pan. 3. If lamb is tied together in twine or in a web/net, insert the rosemary underneath it so the sprigs are pressed against flat against the lamb. 4. Press garlic into lamb, by poking as many small holes with a small knife as needed. 5. Drizzle a tablespoon or two of olive oil and rub all over lamb. 6. Season liberally with salt and pepper. 7. Let lamb sit to room temperature until ready to cook 8. Preheat grill (gas about 5 minutes, charcoal about 20 minutes) to hot. 9. Make sure grill is oiled and clean. 10. Once grill is very hot (place hand a couple inches above the grill grates, and you should have to pull it away within 5 seconds because it's very hot), place lamb on it. You should hear a distinct "sizzle" sound. If you do not hear any sizzle, remove the lamb and wait until your gill is hot enough. 11. Let lamb sizzle and sear, creating an outer lightly darkened crust, rotating onto un-seared side every 3-4 minutes. Once outer lamb has beautiful color, turn down grill to low, and close lid. For medium rare lamb cook to an internal temperature of 130 degree F. This will take at least 20 minutes and up to 45 ...

Tips for Grilling Seafood
Prepare the grill for cooking seafood by applying vegetable oil to the grates with a grill brush. TIP: A great way to cook delicate fish is in a grilling basket. Alternatively, wrap and cook delicate fish in aluminum foil until done. 02 Brush a small amount of olive or vegetable oil on the outside of the seafood. 03 Adjust the grill for a medium (300-350° F) heat. 04 Place the seafood on the grill and cook. Cook seafood for 10 minutes per inch of thickness: 5 to 7 minutes on the first side, 3 to 5 minutes on the other side. Delicate fish such as snapper, salmon and sea bass should be turned carefully so they don't stick and fall apart. If cooking directly on the grids, use two metal spatulas, top and bottom, when flipping the fish. 05 Seafood is done when internal temperature is at least 145° F and it flakes with a fork. Another great option for cooking seafood, as well as other food, is using a grilling plank. The wood plank adds a unique flavor to your food.
