This was a test to see if Grill Grates would be of any benefit over the cast iron grates of the FEPG. The video is a little deceiving at the end as the steaks rested on one plate for 20 minutes, so that plate appeared to have more juices than the other but in reality the moisture content of both was about the same.

Leg of Lamb - Chef Marshall O'Brien

Marshall cooks lamb on the grill. See recipe below: Leg of Lamb serves 6 3lb boneless leg of lamb 4-6 sprigs fresh rosemary, few inches in length 4 cloves garlic, whole or sliced in half lengthwise Olive oil Kosher or sea salt Ground or cracked black pepper 1. Clean lamb as needed, washing with water then patting dry with paper towel. 2. Place on plate or sheet pan. 3. If lamb is tied together in twine or in a web/net, insert the rosemary underneath it so the sprigs are pressed against flat against the lamb. 4. Press garlic into lamb, by poking as many small holes with a small knife as needed. 5. Drizzle a tablespoon or two of olive oil and rub all over lamb. 6. Season liberally with salt and pepper. 7. Let lamb sit to room temperature until ready to cook 8. Preheat grill (gas about 5 minutes, charcoal about 20 minutes) to hot. 9. Make sure grill is oiled and clean. 10. Once grill is very hot (place hand a couple inches above the grill grates, and you should have to pull it away within 5 seconds because it's very hot), place lamb on it. You should hear a distinct "sizzle" sound. If you do not hear any sizzle, remove the lamb and wait until your gill is hot enough. 11. Let lamb sizzle and sear, creating an outer lightly darkened crust, rotating onto un-seared side every 3-4 minutes. Once outer lamb has beautiful color, turn down grill to low, and close lid. For medium rare lamb cook to an internal temperature of 130 degree F. This will take at least 20 minutes and up to 45 ...

Tips for Grilling Seafood

Prepare the grill for cooking seafood by applying vegetable oil to the grates with a grill brush. TIP: A great way to cook delicate fish is in a grilling basket. Alternatively, wrap and cook delicate fish in aluminum foil until done. 02 Brush a small amount of olive or vegetable oil on the outside of the seafood. 03 Adjust the grill for a medium (300-350° F) heat. 04 Place the seafood on the grill and cook. Cook seafood for 10 minutes per inch of thickness: 5 to 7 minutes on the first side, 3 to 5 minutes on the other side. Delicate fish such as snapper, salmon and sea bass should be turned carefully so they don't stick and fall apart. If cooking directly on the grids, use two metal spatulas, top and bottom, when flipping the fish. 05 Seafood is done when internal temperature is at least 145° F and it flakes with a fork. Another great option for cooking seafood, as well as other food, is using a grilling plank. The wood plank adds a unique flavor to your food.

Char-Griller Kamado Kooker (Akorn) Grill/Smoker Review Part 1

Check out our new forum at www.kamadoguru.com if you get a chance! This is my walk-through review of the assembly and features of the Char-Griller (Akorn) Kamado Kooker grill and smoker. One minor item I forgot to mention in the video is that the main cast iron grilling grate has a diameter of 19 3 I had been shopping for a Big Green Egg (large) when this product popped up in the marketplace. At a price point of $299 I had to give it a try before spending $1000 on the Big Green Egg setup that I was looking at. This video shows the cooker itself along with its features and design. Part two of this video will include information from the seasoning burn and initial seasoning of the main cast iron grate. How to Grill Whole Chicken - Weber Grill Knowledge

After preheating the grill to 500 degrees, brush the cooking grate clean and close the lid. Set up the grill for indirect cooking over medium heat, by turning the front control knob to medium, the middle control knob off, and the top control knob to medium. After preparing your chicken by removing the necks, giblets and any excess fat, brush the chicken in olive oil. Then season with kosher salt and pepper. Truss the chicken legs using butcher's twine. Fold the wingtips behind the chicken's back. Place the chicken, breast side up over indirect medium heat. Close the lid and grill for 1 1/4 - 1 1/2 hours. Open the lid and check to see if the chicken is done. Place a meat thermometer in thickest part of the thigh, not touching the bone. The thermometer should read 175 degrees Fahrenheit. If you don't have a thermometer, cut between the drumstick and the thigh. The meat should no longer be pink near the bone. Best Bison Burgers

Best Bison Burgers Prep Time: 10 minutes Cook Time: 15 minutes Serves 4 to 6 2 pounds Ground Bison 4 to 6 good quality hamburger buns, heated on grill 2 Tablespoons Adams Reserve Peppercorn & Garlic Sear n Crust Rub* ½ cup Cookwell & Company Garlic & Molasses Marinade* 2 cups baby spinach 1 medium tomato, sliced ¼ cup sliced kosher dill pickles ¼ cup crumbled Maytag Blue Cheese 2 Tablespoons Cookwell Cracked Pepper Vinaigrette* 1. Prepare charcoal fire or heat gas grill 10 minutes on High heat; clean and oil grill grate well (clean grates mean less sticking). 2. How do I apple-pie my grill? And back do I alter a burner?

There is definitely a right way and a wrong way when it comes to cleaning your grill. The right way will make your grill last longer and will ensure the flavor of the your food remains as tasty as possible. In this video, we'll tell you what you need to keep your grill clean, as well as the best way to clean it. When it comes to cleaning, a top-down philosophy is usually best. Cleaning a grill is no different. And at the top of every grill are your grill grates. Don't clean your grates immediately after grilling. Leave the cooking residue on them to protect the cast iron. Right before you grill the next time, turn the heat up and burn those residues into charcoal, then brush them off with a steel -- not a brass -- brush. Don't forget to scrape your flavorizer bars, too, if your grill has them -- they are the bars that sit over your burners. But use your brass brush on those. Occasionally, you'll want to clean the grates with soapy water and a wire scouring pad. Avoid lemon- or citrus-based soap cleaner, because the acids can eat away at the cast iron. When you're done, towel dry them. Air drying could cause rust. Continuing with the top-down process, regularly clean off the area over the burners. This might include lava rocks, briquettes or a metal plate. Use hot soapy water to clean off grease and particles from these, and then rinse them in clean water. Use a towel on the bottom of your sink while you're cleaning the briquettes, so that they don't scratch your sink's ...
